All of our Natural Pecan Wood Smoked Sausage is slow smoked to perfection BUT NOT FULLY COOKED. When preparing our smoked sausage, always remember to cook the sausage until the internal temperature reaches 160 degrees fahrenheit. When preparing our smoked sausage on the grill or smoker, we recommend using indirect heat at a low temperature of 225-250 degrees fahrenheit, taking extra care not to over cook the sausage so the casing does not split. Don’t have enough time to fire up the grill or smoker? A traditional way to prepare our smoked sausage is to simply boil it in a pan of water until the internal temperature reaches 160 degrees fahrenheit.
How should I store beef Jerky?
Both our Turkey Jerky and Beef Jerky are best stored in a dry cool place not in direct sunlight. If you decide to keep our Jerky in a baggie, simply open the baggie and allow the Jerky to “breath”. This will ensure that no moisture settles on the product and molds. Vacuum packaging our Jerky and placing it in a freezer will lock in the quality and flavor of the product for many month as well.

Our stuffed pork tenderloin can be prepared either by baking in the oven or on the grill. When baking, preheat the oven to 350 deg. F, place the tenderloin un covered in a medium sized pan. Bake until the internal temperature reaches 160 deg. F. On the grill, our tenderloins are best cooked with indirect heat at 325 deg. F. Grill until the internal temperature reaches 160 deg. F.
How do I store summer sausage?
Summer Sausage looses its freshness quickly once sliced, so it’s best to keep it for only three to five days. To prevent spoilage, store in resealable plastic bags or airtight plastic container and keep in the refrigerator towards the back, where it’s usually coldest.
How do I prepare stuffed jalapeno and stuffed mushrooms?
Our stuffed jalapeños and mushrooms are best prepared on the grill. Simply place them on the grill away from the heat source at a medium temperature of 225-250 deg. F. When the internal temperature reaches 160 deg. F. they are ready to go. Additional cooking is fine if a crispier bacon texture is desired.

How do I prepare country smoked turkey?
Thawing Instructions: Our Country Smoked Turkeys are frozen immediately after smoking to preserve freshness and quality. (1) If frozen, no hurry, Leave in bag and place on a tray in the refrigerator for 2-3 days (about 4 hours per pound) (2) Faster: Leave in bag, cover with COLD water for 4-7 hours (about 1/2 hour per pound.
Reheating Instructions: Our Country Smoked Turkeys are smoked to an internal temperature of 170 deg.F. To serve the whole smoked turkey hot, remove from bag, remove netting, wrap in foil and place wrapped turkey in a sealed roasting pan. Heat at medium temperature (approx. 325 deg.F) until the internal temperature reached 160 deg.F. Approx. 10-15 minutes per pound.
How Do I prepare Bacon
The Classic Method: In a Skillet
This tried-and-true method is the obvious choice when you need to cook 6 to 8 slices at a time.

How do I reheat Tamales.
IN THE AIR FRYER:
Leave the tamales in their husk. Warm up your air fryer and then place the tamales in the air fryer basket. Cook them for five to eight minutes.
IN THE STEAMER:
Fill your steam with 1/4 cup of water and turn the temp to medium. Steam the tamales for 15 minutes.
IN THE OVEN:
Wrap the tamales in foil. Stack them in a glass dish. Bake them for 20 minutes or until they are fully warmed.
IN THE SKILLET:
Add vegetable oil to a skillet over medium. Cook tamales on each side for 4 minutes or until warm through and through.
How do I reheat boudin.
IN THE OVEN:
Step 1: Preheat the Oven
Heat the oven to 300 degrees Fahrenheit and line a rimmed baking sheet with foil if you want boudin with a seared, crispy texture.
Step 2: Lay on Foil
Coat the foil with a thin sheen of oil and place the boudin links on it, spacing them at least 1 inch apart. Slide the boudin in the oven.
Step 3: Bake the Sausage
Bake the boudin for 20 to 25 minutes, turning over the links every five to 10 minutes with tongs.
Step 4: Check the Temperature
Take the boudin out of the oven and check for an internal temperature of 145 F by inserting a meat thermometer in the center of a link lengthwise. According to the Academy of Nutrition and Dietetics, this is the minimum safe temperature for consumption of pork products. Serve hot and steaming.
ON THE STOVE TOP:
Step 1: Heat Some Water
Pour a few inches of water in a saucepan or pot and set it on the stove over medium-high heat if you want a soft-textured boudin.
There's no need to use stock or another flavorful liquid to cook the boudin because it won't penetrate the casing.
Step 2: Simmer the Sausage
Place the boudin in the pan after the water starts simmering. Simmer the boudin for five minutes after the water returns to a simmer.
Step 3: Drain and Serve
Check the links for an internal temperature of 145 F and place them on a plate lined with a paper towel to drain. Serve immediately.
ON THE GRILL:
Step 1: Preheat the Grill
Set up the grill to cook with medium heat if you want a smoky, charred boudin.
If you have a charcoal grill, the amount of charcoal you need varies with the size, but about 50 to 60 pieces of lump charcoal spread evenly in the charcoal tray should do it for an average-sized model.
Step 2: Lay Links on Grill
Lay the boudin links on the grill, spacing each at least 1 inch from the next.
Step 3: Cook Until Done
Grill the boudin links for about two minutes on each side. Take the links off the grill and check the internal temperature before serving.
